At Rose n’ Thistle Farm, our pork is more than a product—it’s the result of intentional stewardship from start to finish. We are a farrow-to-table farm, which means every piglet is born and raised right here on our land, from our carefully selected heritage bloodlines. We don’t buy in feeder pigs. Instead, we oversee every stage of their life—ensuring excellent genetics, gentle handling, and high-quality nutrition every step of the way.

Our pigs are raised on pasture where they root, roam, and thrive as pigs were meant too. Never given antibiotics or hormones. This slow, natural growth creates pork that’s richly marbled, deeply flavorful, and full of the old-fashioned quality you simply can’t find in grocery stores.

We work with a trusted local USDA processor, where your pork is professionally cut, vacuum sealed, and ready for your freezer. Whether you’re buying a whole hog, a half, or a sampler box, you can feel confident knowing your meat was raised with care, purpose, and integrity—from birth to butcher.

When we say “pasture-raised pork, raised right,” we mean it—because we’re with them from the very first breath to the final harvest, and we count it a privilege to feed your family well.

What We Have to Offer

  • Whole Hog

    Our whole hogs are pasture-raised the old-fashioned way—on fresh grass, sunshine, and a natural, non-GMO diet. We raise heritage breed pigs for their rich flavor, marbled meat, and exceptional quality. At processing time, our pigs typically weigh between 230–250 lbs live, yielding a hanging weight of around 180–190 lbs. After processing, you can expect to take home about 100–120 lbs of packaged meat, depending on your cut choices.

    Your pork will be custom cut and vacuum sealed by a trusted local USDA processor we’ve used for years. Cuts typically include a variety of chops, roasts, ribs, ground pork, hams, bacon, and sausage—but the final breakdown is completely up to you. This allows you to fill your freezer with the exact cuts your family loves.

    Price: $650 (based on live weight, not hanging weight)

    Processing fee: Typically around $180 (paid separately to the processor)

    Packaging: Vacuum sealed and freezer-ready

    Pickup: At the processor or arranged locally with us

    Our heritage pork is flavorful, nutrient-dense, and raised with integrity. Buying a whole hog is a cost-effective way to stock your freezer with clean, ethically raised meat—perfect for families who value food security and real nourishment.

  • Half Hog

    Looking to stock your freezer without committing to a whole hog? Our half hog option is perfect for smaller families or first-time bulk buyers. Raised on pasture and fed a clean, non-GMO diet, our heritage pigs are cared for with the same attention and respect we give everything on our farm.

    A half hog yields a hanging weight of around 90–95 lbs, and you'll take home about 50–60 lbs of packaged meat, depending on your cut preferences. You’ll work directly with our USDA processor to choose the exact cuts you want—from pork chops and roasts to sausage, ribs, bacon, and more. All meat is vacuum sealed, labeled, and ready for your freezer.

    Price: $350 (based on live weight)

    Processing fee: Approximately $90 (paid separately to the processor)

    Packaging: Vacuum sealed and freezer-ready

    Pickup: At the processor or coordinated locally

  • Quarter Hog Box – Pork Sampler

    Not ready for a whole or half hog? Our Quarter Hog Box is the perfect way to try out our pasture-raised, heritage pork without needing a chest freezer or committing to a large order. You'll receive a hand-picked variety of our most popular cuts, all from pigs raised on pasture with non-GMO feed and processed by our trusted USDA facility.

    Each box typically includes:

    Pork chops

    Shoulder or Boston butt roast

    Sausage (mild or breakfast)

    Ribs

    Bacon or belly

    Ground pork

    Total packaged weight is approximately 25–30 lbs, vacuum sealed and freezer-ready.

Upcoming Butchering Dates

Our next group of hogs is scheduled to go to the processor in February 2026.

If you’ve reserved a half or whole hog with us, this is the processing window your pork will fall into. We’ll be in touch closer to time with exact drop-off and pick-up dates, as well as cut sheet instructions.

What You Can Expect:

  • We’ll confirm your order and balance due in January.

  • You’ll receive a cut sheet from the processor to customize how you’d like your pork packaged.

  • Once processing is complete, you'll pick up your pork directly from the processor (location and details will be provided via email).

What You Get With a Half or Whole Hog

When you reserve a whole or half hog from Rose n’ Thistle Farm, you're not just buying pork—you're investing in heritage flavor, thoughtful animal husbandry, and a transparent, farrow-to-table process. Every pig is born right here on our farm from our curated bloodlines and raised on pasture with care, intention, and respect.

Below is a breakdown of what’s included in your custom-cut order:


Half Hog

Approximately 90 lbs of finished pork
Here’s what you can expect:

  • Shoulder Options (Choose One):
    • Pork butt roast (1) & picnic roast (1)
    • OR Up to 6 shoulder roasts
    • OR Pork steaks (approx. 21)

  • Pork Loin Options (Choose One):
    • Boneless pork chops (approx. 24), baby back ribs (1 rack), and a tenderloin
    • OR Bone-in pork chops (approx. 35)

  • Spare Ribs – 1 rack

  • Bacon – 10 lbs sliced (your choice of cured or fresh)

  • Jowl Bacon – 3 lbs sliced (your choice of cured or fresh)

  • Ham (Approx. 20 lbs, Choose One Option):
    • Cured whole
    • Sliced cured ham
    • Fresh ham (choose roasts, steaks, or cutlets)

  • Sausage (Approx. 7 lbs):
    • Your choice of bulk, links, or patties
    • Packaged in 1, 1.5, or 2 lb portions

Whole Hog

Approximately 180 lbs of finished pork
Double everything in the half hog, with more flexibility for custom cuts. Great for larger families, stocking the freezer, or splitting with a friend!


Unprocessed Option

Want full control over your processing?
We also offer whole hogs unprocessed at $1.70/lb hanging weight. This allows you to choose your own processor and custom cutting instructions.

Deposits & Pick-Up

We require a $200 deposit to reserve your hog. Final balances are due at pickup. Your order will be vacuum-sealed, labeled, and frozen—ready for your freezer.
